Milestone Delivered: Conquest Launches Coles at Caringbah Pavilion

A new chapter for Caringbah’s town centre began this morning as Conquest officially welcomed Coles and Liquorland back to the heart of the Sutherland Shire, marking the first major step in reinvigorating what was once the Shire's premier shopping precinct.

It had been 934 days since Coles closed its doors on this iconic site. Today at 8:30am, as the roller doors went up, Conquest delivered on its promise to the local community, handing back a brand-new, expanded supermarket anchoring the Caringbah Pavilion precinct.

The return of Coles and Liquorland marks a major completion milestone for Caringbah Pavilion. The development transforms the former supermarket footprint into a vibrant neighbourhood destination combining 242 apartments across two buildings (rising seven and nine levels) alongside curated retail and active community spaces.

For Conquest, the opening represents a key milestone achieved: creating a precinct designed to revitalise the area while giving locals back time to spend on what matters most.

“Just over two years ago we closed the old store, and to have this opening today is a monumental achievement for us and the community,” Conquest CEO Michael Akkawi.

“We see this as the revitalisation of the Caringbah precinct, which has been overlooked for many years. We have completed significant infrastructure upgrades as part of the project. The council has been very supportive, but we would like to see more infrastructure in Caringbah and more housing.”

“Caringbah Pavilion is built so that everything you need is right at your doorstep—your morning coffee, your weekly groceries, your favorite bite to eat. It’s about giving people back time. Instead of running errands across town, they can spend it with family, friends, and community.”

Federal MP for Cook, Simon Kennedy, congratulated the project team during the opening, noting:

“I think it’s a sign of what Caringbah could be, and I hope Sutherland Shire Council takes note and starts revitalising Kingsway and the rest of Caringbah... If we can replicate this project, it’s exactly what Caringbah needs.”

A Major Economic Boost for the Sutherland Shire

The broader Caringbah Pavilion development is driving substantial economic growth, creating approximately 250 permanent jobs across the precinct—with 60 per cent of the workforce entering their very first job.

Coles Caringbah Store Manager, Sandy, who started his 13-year Coles career as a team member at Broadway, shared the team's excitement about welcoming locals into the upgraded space:

“Caringbah has been part of the Coles network for many years, so reopening on the same site with a brand-new store is an exciting moment for our team and the community,”

“Customers have been telling us how much they’ve missed having Coles here. We couldn't wait for them to see the transformation.”

The elevated supermarket offer features an open-front bakery with warm flatbread and sourdough, a full-service deli, an expanded fresh produce department, a frozen dessert bar, and enhanced convenience options including dedicated Click & Collect bays across two levels of underground parking. Unsold edible food will also support the local community through Coles' partnership with SecondBite, Southside Christian Fellowship, and The Salvation Army.

Strong Demand as Retail and Residential Roll Out

The Coles and Liquorland openings represent the first phase of a rolling retail schedule at Caringbah Pavilion, operated by Queensbridge. Over the coming weeks, a curated mix of tenants will open progressively, including:

• Dining & Hospitality: Mexican restaurant Guzman Y Gomez, pizza and pasta bar Product of Italy, and cafe/deli-style eatery Soulte.
• Services: Kingsway Hair salon and Glam & Glow Nail.

Residential Momentum

The precinct’s residential stage is scheduled to welcome its first occupants in September. Strong local market demand is already evident, with 50 per cent of the 242 apartments already sold prior to completion.

Celebrating with the Community

To mark the milestone, Conquest hosted a free community breakfast outside the Coles entrance this morning from 7:00am to 10:00am, shouting locals a complimentary morning coffee to celebrate the supermarket's return.

Visitors also had the opportunity to step inside a Caringbah Pavilion display apartment to experience everyday life at the precinct ahead of the September move-in date—showcasing the panoramic views, resort-style wellness amenities, and seamless doorstep retail that define the development.
